Quinoa – warm &moist salad (from Margarita) Serves: +7 people Ingredients (*): 1.5 cups of dry quinoa 3 cups of water 1/2 onion sliced 1Tbsp – hot curry (w/ cayenne) 1 Tbsp – dry ground green mango Spinach Sweet Corn Raw sunflower seeds Dried Tibetan Goji berries Dried cranberries Olive oil Ground Sea salt Ground rainbow pepper Capers Instructions: 1. Cook the quinoa with the water 1/4 onion (sliced), add the hot curry, the mango powder, and some salt and pepper to taste. 2. In a skillet steam the spinach with the rest of the onion and the corn; once slightly cooked, set aside to cool. 3. Mix the cooked quinoa with the content of the skillet in #2. 4. Add the sunflower seed, the goji berries, the cranberries, olive oil (about 1/3 of a cup), capers, salt and pepper - depending on desired taste. 5. Mix well, let cool until warm. Can be served warm or cool. (*) – use organic when possible
