Vegan Coffee Cake [Healthy Solutions Anthem Leaflet, Issue 1 - 2007] For cake: 1 1/2 c sifted unbleached all purpose flour 2 tsp baking powder 1/4 tsp salt 1/ tsp baking soda 3/4 c sugar or splenda 2 TBS ground flax seed 6 TBS water 3/4 c soy milk 3/4 tsp vinegar 1/3 c margarine [vegan] 1/2 tsp vanilla extract Sift flour, baking powder, baking soda, salt & sugar in large bowl. In a separate bowl combine ground flax & water. To the flax min in soy milk, vinegar, margarine & vanilla. Pour wet into dry mixture. Beat until smooth. Spread batter in greased 9x9 inch baking pan. For topping: 5 TBS sugar or splenda 2 tbs margarine [vegan] 1/2 tsp ground cinnamon In a small bowl, mis all ingredients with fork to resemble cornmeal. Sprinkle over cake batter. Baker in preheated 350 F oven for 20-25* mins or until toothpick comes out clean. Cool slightly. * If you double the recipe the cooking time is approx. 42 mins.
