K's Tomato Polenta 3 c water 1 tsp low sodium salt [optional] 1/2 c coarse ground dry corn [polenta] 1/2 tsp dry basil, crush 2-3 tsp tomato paste 4 dried tomato 1/2's in olive oil, drain, chop small Boil water. Wisk in dry polenta stirring constantly. Add remaining ingredients. Stir often until corn is done [about 30 min]. It will be soft textured. Serve.
