Sufferin'  Sweet  Potato  Succotash

1 1/2  c frozen cut corn, thaw
3/4 c frozen lima beans, thaw
vegetable oil spray
1/3 c diced onion
1 garic clove, mince
1 (10 oz) can sweet potatoes, drain, dice or 1 1/4 c baked sweet potato, dice.

In small bowl toss together corn & beans.  Set aside.  Spray a medium-sized pot with oil.   Heat 
& saute onions & garlic until soft (approx 2 mins).  Add corn, beans, potatoes, pepper.  Cook
5 mins or until all veg's are hot.
