Pea Salad 2 pkgs fresh green peas, cook 1 jar or can red pimentios 1 c (or more as desired) green onion, chop 2 c celery, chop Toss vegs with salt & pepper to taste. Dressing: 1/2 c veg oil 1 c vinegar 1 c sugar, or to taste Mix well. Pour over vegs. Refrigerate 2+ hours or overnight.
