Vegan Mexican Chocolate Cake 1 1/2 c flour 1 c sugar 1/4 c cocoa 1 tsp baking soda 1 1/2 tsp cinnamon 3/4 tsp cayenne pepper 1 tsp vanilla 1 TBS white vinegar 5 TBS oil substitute (applesauce or "Light Baker") 1 c cold water Preheat oven to 350 deg F. Lightly grease 9 in cake pan. In large bowl, combine flour, sugar, cocoa, baking soda, cimmanon & cayenne. Add vanilla, oil substitute & water. Stir until just combined. Pour into cake pan. Bake 30 min, until knife inserted in center comes out clean. Remove from oven & sprinkle with powdered sugar if desired.
