Gazpacho Salad 1 [16 oz] package pasta of your choice, boil & drain 1 1/4 cup tomato juice 1 1/2 TBS Olive oil 2 TBS Red wine vinegar 1/4 tsp black pepper Toss with cooked pasta. Refrigerate 2 - 4 hours. Finely chop: 1 cucumber 1 green & 1 red bell pepper 1/2 medium red onion 1 jalapeno chile 1 garlic clove Cilantro several tomatoes, coarse chop 1 celery stalk, slice thin Toss all with pasta. Garnish with cilantro and lime wedges.
