K's Baked Apples by Kristine Quintero 15 Aug 2006 Apples: 5 granny smith type apples, 1/2'd, cored 30 fresh blueberries 3 tbs water Cinnamon 1 tbs splenda Place 1/2'd apples skin-side down in a baking dish. Place 3-6 blueberries in each apple hollow. Sprinkle with splenda and cinnamon. Add water to dish. Bake 400 F ~ 30 min - till apples are tender. See topping below. Topping: 8 oz tofu 3 - 4 tbs soy milk 1 tsp vanilla 1/4 c splenda All fruit spread of your choice Mix smooth in blender. Cool in frige. Dot each apple with about 2 tbs topping. Place about 1 tsp of your favorite fruit spread on top and in the middle of the topping. Serve. May be served warm or cool.
