To Lower Fat Content in Recipes:
In Liquid Recipes (ie; salad dressings): To maintain the proper flavor balance replace fats with other liquids such as water, juice, or Oil Substitutes (see below).
In Baked Goods: Replace fats with fruit purees such as applesauce, or babyfood fruit puree. It's been suggested to only replace half the
fat with puree or applesauce. However, you can replace ALL the fat with applesauce with no loss of flavor or texture EXCEPT that the outer side that's been exposed
to the heat will have a thin layer that is slightly more chewy than the inner part of the item. It doesn't change the flavor or texture and the chewy part
is hardly noticible.
Oil Substitutes for Salad Dressings:
Using Cornstarch
Using Faux Chicken Flavoring
No-Oil Salad Dressing:
Italian Dressing - No Oil
